The Best of Bacon
A bacon lover I know recently said to me when we were on the subject of food, “Bacon is my crack” - and it seems he is not alone. Of the many people world over who love the crispy, fatty, juciy flavor and texture of bacon, one lucky person got to present an award at the second annual Independent Food Festival in 2006.

His food of choice, bacon of course. But not just any bacon, oh no, his new found god of bacon’s - Wild Boar Bacon. Now titled the 2006 Independent Food Award Best Result of Pigs Gone Wild, this bacon recives spcial treatment which gives it a special flavor.
Wild Boar Pigs are caught by freelance trappers in Texas, sold in Nevada, then the bellies are sent to Dale’s Exotic Game Meats in Brighton, Colorado for smoking. This process involves placing the bellies in a vacuum tumbler with salt and sugar brine for 2-3 hours, then cold smoking them over hickory for another 10 hours. The meat travels to Washington, and eventually works its way to your stomach…and it is worth every penny.
